Wriggling: What inspired you to do all this work on allergies and sensitivities?
Meredith: My big inspiration was the birth of my eldest daughter in 1999. She was born reacting to all sorts of foods that I was taking in with my breast milk. She ended up with complications that caused pain for six months, frequent colds, and colic. There were all sorts of symptoms being caused by food.
Wriggling: Why are children reacting to food more than they ever have before?
Meredith: The simple answer is that the world is more toxic than it has ever been before. We do not have the pure stuff that our ancestors had the benefit of. Diet is the number one way to start preventing kids from getting sick. There is not a lot you can do about the air or water, but diet is the best way to make a change.
Wriggling: Why is it so important to watch the sugar levels of children?
Meredith: You’ve got to cut out the sugar. Sugar is an ingredient in all sorts of foods. Sugar caused inflammation in the body which can cause symptoms. Sugar also weakens the immune system which can cause any sort of ailments.
Wriggling: Do you think organic food is the answer?
Meredith: I do feel we should be eating more organically. Our ancestors had healthier food than we did and they didn’t have to have anything organic – it was just natural, mineral-rich food. What we eat now is not as healthy as our ancestors ate, but organic food is the healthiest we have. Check the labels and make sure it is certified organic.
